Peppermint Fudge Brownies

Ingredients
1/4 cup Melted Coconut Oil
1/2 cup Smooth, Natural Almond Butter
1/2 cup Coconut Sugar
2 Flax Eggs (2tbsp ground flax mixed with 6tbsp water)
1/2 cup Cacao Powder
1 tsp Vanilla Extract
1/4 tsp Peppermint Extract
1/4 tsp Baking Powder
1/4 tsp Salt
1/4 cup Almond Flour
1/3 cup Coconut Cream
2/3 cup Nondairy Chocolate Chips
1/8 tsp Peppermint Extract
Sprinkles (optional)
Directions
- Line an 8x8 pan with parchment paper and preheat oven to 350°F.
- In a bowl, mix together all of the brownie base ingredients until well combined.
- Press evenly into the prepared pan and bake for 16-18 minutes.
- Let cool in the fridge for at least 20 minutes.
- In a small saucepan, melt together all of the fudge frosting ingredients until smooth.
- Spread evenly over top of the cool brownie base. Add optional sprinkles.
- Return to fridge to set for at least an hour before slicing and enjoying!
