1 (14 oz.) pkg. frozen puff pastry dough, thawed
½ (8 oz.) pkg. Fresh Thyme triple crème Brie
6 Tbsp. apricot spread
6 Tbsp. fresh pomegranate arils
Fresh thyme, for garnish
Directions

1 (14 oz.) pkg. frozen puff pastry dough, thawed  

½ (8 oz.) pkg. Fresh Thyme triple crème Brie 

6 Tbsp. apricot spread  

6 Tbsp. fresh pomegranate arils 

Fresh thyme, for garnish 

  1. Place oven rack in the center of oven. Preheat oven to 400°F. Line two baking sheets with parchment paper; set aside. 
  2. Unfold puff pastry dough on a lightly floured surface. Roll dough into a 12-inch square. Cut dough into 36 (2-inch) squares; divide onto prepared baking sheets. Lightly score a ¼-inch border around the edges of each pastry square with a sharp paring knife.  
  3. Bake one pan at a time 12 to 16 minutes, or until golden brown. 
  4. Meanwhile, cut Brie into 36 (½-inch) pieces. 
  5. While pastry squares are warm, press each square with the back of a ½ teaspoon measure to create a well. Place one Brie piece into each well and top with apricot spread and pomegranate arils.  
  6. Transfer Brie bites to a serving board. Garnish with fresh thyme, if desired.
