4 cups water
â…” cup Fresh Thyme organic unrefined cane sugar
5 peaches, pitted; cut into wedges and halved
5 The Republic of Tea ginger-peach tea bags
1 Tbsp. fresh lemon juice
1 recipe Peach-Tea Base (4 cups)
3 oz. Fresh Press Farms organic peach cider vinegar
16 oz. Waterloo peach sparkling water
Peach slices, for garnish
Lemon wedges, for garnish
Fresh Thyme organic mint, for garnish
Directions

PEACH-TEA BASE 

4 cups water 

â…” cup Fresh Thyme organic unrefined cane sugar 

5 peaches, pitted; cut into wedges and halved 

5 The Republic of Tea ginger-peach tea bags 

1 Tbsp. fresh lemon juice  

SPARKLING TEA 

1 recipe Peach-Tea Base (4 cups) 

3 oz. Fresh Press Farms organic peach cider vinegar 

16 oz. Waterloo peach sparkling water 

Peach slices, for garnish 

Lemon wedges, for garnish 

Fresh Thyme organic mint, for garnish 

  1. For base, in a large saucepan, stir together water and sugar; add peaches. Cover and bring to a boil over high heat; reduce heat to medium-low. Cover and simmer for 10 minutes or until peaches are softened. Slightly mash peaches with a potato masher. Return to a simmer; remove from heat. Add tea bags; cover and steep for 10 minutes. 
  2. Remove and discard tea bags. Strain syrup mixture through a fine-mesh sieve set over a small bowl; press juices from peaches with the back of spoon. Discard pulp. Stir in lemon juice; cool to room temperature. Store, covered, in the refrigerator up to 3 days.     
  3. For sparkling tea, fill 80-oz. pitcher half full with ice cubes. Add peach-tea base and vinegar; stir to combine. Add sparkling water; gently stir. Serve in ice-filled 12-oz. glasses; garnish with peach slices, lemon wedges, and mint, if desired.
