2 ripe avocados, seeded and peeled
1 Tbsp. fresh lemon juice
⅛ tsp. Fresh Thyme fine sea salt
⅛ tsp. freshly cracked black pepper, plus more for garnish
1/2 cup grape tomatoes, halved
2 Fresh Thyme hard-cooked eggs, sliced
4 slices fully cooked bacon
2 oz. Fresh Thyme goat cheese crumbles
Directions

4 (½ -inch-thick) slices Fresh Thyme Bakery pumpkin sunflower bread 

2 ripe avocados, seeded and peeled 

1 Tbsp. fresh lemon juice 

⅛ tsp. Fresh Thyme fine sea salt 

⅛ tsp. freshly cracked black pepper, plus more for garnish 

½ cup grape tomatoes, halved  

2 Fresh Thyme hard-cooked eggs, sliced 

4 slices fully cooked bacon  

2 oz. Fresh Thyme goat cheese crumbles 

  1. Toast bread in toaster.
  2. In a small bowl, mash avocados, lemon juice, salt, and pepper with a fork.
  3. Spread avocado mixture on toasts.
  4. Top toasts with grape tomatoes, sliced hard-cooked eggs, bacon, and goat cheese crumbles.
  5. Garnish with freshly cracked black pepper, if desired.
