




PEACH-TEA BASE
4 cups water
â…” cup Fresh Thyme organic unrefined cane sugar
5 peaches, pitted; cut into wedges and halved
5 The Republic of Tea ginger-peach tea bags
1 Tbsp. fresh lemon juice
SPARKLING TEA
1 recipe Peach-Tea Base (4 cups)
3 oz. Fresh Press Farms organic peach cider vinegar
16 oz. Waterloo peach sparkling water
Peach slices, for garnish
Lemon wedges, for garnish
Fresh Thyme organic mint, for garnish
- For base, in a large saucepan, stir together water and sugar; add peaches. Cover and bring to a boil over high heat; reduce heat to medium-low. Cover and simmer for 10 minutes or until peaches are softened. Slightly mash peaches with a potato masher. Return to a simmer; remove from heat. Add tea bags; cover and steep for 10 minutes.
- Remove and discard tea bags. Strain syrup mixture through a fine-mesh sieve set over a small bowl; press juices from peaches with the back of spoon. Discard pulp. Stir in lemon juice; cool to room temperature. Store, covered, in the refrigerator up to 3 days.
- For sparkling tea, fill 80-oz. pitcher half full with ice cubes. Add peach-tea base and vinegar; stir to combine. Add sparkling water; gently stir. Serve in ice-filled 12-oz. glasses; garnish with peach slices, lemon wedges, and mint, if desired.
