Ingredients
1½-2 lbs pork loin
1 lb Brussels sprouts, halved
2 Honeycrisp apples, sliced
⅓ cup honey mustard dressing
1/2 tbsp dried rosemary
½ tbsp garlic powder
⅓ cup dried cranberries
2 cups uncooked long grain and wild rice blend
3 tbsp olive oil
Pinch of salt
Pinch of pepper
Directions
  1. Preheat oven to 425°F. 
  2. Toss Brussels sprouts and apples with olive oil, rosemary, garlic powder, salt, and pepper. 
  3. Arrange Brussels sprouts and apples around the outer edges of a sheet pan, keeping them in separate sections if desired. 
  4. Place pork in the center of the pan. Season lightly with salt, pepper, rosemary, and garlic powder, then brush with honey mustard dressing. 
  5. Sprinkle cranberries over the vegetables. 
  6. Roast for 30-35 minutes, or until pork reaches 145°F and Brussels sprouts are tender with browned edges. 
  7. While the pork cooks, prepare wild rice according to package directions. 
  8. Let pork rest for 5 minutes before slicing. 
  9. Serve sliced pork and vegetables over wild rice.
