½ cup shredded coconut, plus more for sprinkling
¼ cup Fresh Thyme coconut cream
30 pitted organic dates
4½ Tbsp. finely chopped unsalted whole roasted almonds

¼ cup Fresh Thyme coconut cream

4½ Tbsp. finely chopped unsalted whole roasted almonds

- Line a small rimmed baking pan with parchment paper; set aside. In a small bowl, stir together ½ cup coconut and coconut cream.
- Open slit down the center of each date. Fill each date with about ½ tsp. coconut mixture. Place dates on the prepared baking pan.
- In a small microwave-safe bowl, microwave chocolate morsels on HIGH at 15-second intervals or until melted, stirring each time.
- Drizzle chocolate over the dates. Sprinkle with almonds and, if desired, additional coconut. Freeze for 5 to 6 minutes or until chocolate is set. Store in a tightly covered container with parchment paper between layers; refrigerate up to 2 weeks.
