Garlic and Herb Crusted Rack of Lamb

Ingredients
1 Thomas Farms Rack of Lamb, Frenched
1-2 teaspoons Kosher salt
1/2-1 teaspoon black pepper
5 garlic cloves
1/4 cup olive oil
2 sprigs of fresh rosemary
2 sprigs of fresh thyme
Directions
- Place the lamb rack on a baking sheet and season with Kosher salt and black pepper and let it sit at room temperature for 1 hour.
- Meanwhile, add all of the crust ingredients to a food processor and pulse to make a rub.
- Preheat the oven to 425 degrees F.
- Rub the garlic and herb mixture over the lamb rack.
- Place the lamb in the oven for 10 minutes, flip and cook for another 10 minutes until the internal temperature has reached 140 degrees F.
- Remove the lamb from the oven, let rest for 10 minutes, cut and enjoy!
