Ingredients
Fresh Thyme olive oil cooking spray
4 lb. sweet potatoes or red yams, peeled and sliced ⅛ inch thick
¼ cup Fresh Thyme extra-virgin olive oil
1½ tsp. Fresh Thyme fine sea salt
½ cup dried cranberries, lightly chopped
3 Tbsp. Fresh Thyme organic maple syrup
2 Tbsp. balsamic vinegar
½ tsp. ground cinnamon
2 Tbsp. unsalted butter
⅓ cup finely chopped praline pecans
Fresh thyme leaves, for garnish
Directions
- Preheat oven to 325°F. Spray a 2½-qt. baking dish (with 2-inch sides) with cooking spray; set aside.
- In a large bowl, toss potatoes with olive oil and salt. Arrange sweet potato slices on edges in the prepared dish, working in a circle from the outside in. Sprinkle with cranberries, tucking some between slices. Cover tightly with foil.
- Bake 1 hour 15 minutes or just until potatoes are tender. Meanwhile, in a small saucepan, combine maple syrup, balsamic vinegar, and cinnamon. Bring to a boil; reduce heat. Gently simmer 2 minutes. Stir in butter and praline pecans.
- Uncover potatoes; drizzle with syrup mixture. Bake, uncovered, 10 to 15 minutes more or until potatoes are tender. Let stand 5 minutes before serving.
