


Stuffed Acorn Squash

Stuffed Acorn Squash

Ingredients
2 acorn squash
1 lb Italian chicken sausage
1 jar roasted red pepper
1 3oz. package of goat cheese
4 tbsp olive oil
Salt to taste
Pepper to taste
Directions
2 acorn squash
1 lb Italian chicken sausage
1 jar roasted red pepper
1 3oz. package of goat cheese
4 tbsp olive oil
Salt and pepper to taste
- Pre-heat oven to 400 degrees, line a baking sheet with aluminum foil and place whole acorns on the baking sheet. Place baking sheet in the oven and cook acorn squash whole for 1 hour.
- While squash is cooking, take a medium size pan and heat on medium/low. Drizzle 2 tbsp olive oil into the pan and brown the Italian chicken sausage until fully cooked.
- Slice roasted red pepper into thin slices and place in the pan with the chicken sausage, mix well.
- Add goat cheese to the chicken sausage and pepper mixture, mix well allowing cheese to completely melt.
- Remove acorn squash from the oven, slice in half and remove the seeds and pulp. Then drizzle each acorn squash half with remaining olive oil and season with salt and pepper.
- Fill each squash with the Italian meat mixture, place back in the oven and cook for 15 minutes more and enjoy!
