Fresh Thyme coconut oil cooking spray
2 cups whole wheat flour
2 tsp. Fresh Thyme organic ground cinnamon
1½ tsp. Fresh Thyme baking soda
½ tsp. Fresh Thyme fine sea salt
2 cups peeled and coarsely grated carrots
½ cup Fresh Thyme organic shredded coconut
½ cup pecan pieces
½ cup raisins
3 Fresh Thyme large eggs, lightly beaten
1 cup Fresh Thyme expeller pressed canola oil
¾ cup Fresh Thyme pure honey
2 tsp. Fresh Thyme organic vanilla extract
1 medium apple, cored and coarsely grated
1 (8 oz.) pkg. cream cheese, softened
¼ cup Fresh Thyme salted butter, softened
1 tsp. Fresh Thyme organic vanilla extract
4 cups Fresh Thyme organic powdered cane sugar
Directions
- Preheat oven to 325°F. Lightly spray a 13×9-inch baking pan with cooking spray. In a large bowl, whisk together whole wheat flour, cinnamon, soda, and salt. Whisk in carrots, coconut, pecans, and raisins.
- In a medium bowl, whisk together eggs, oil, honey, and vanilla. Whisk in grated apple. Add egg mixture to flour mixture; stir just until combined. Spread in prepared pan. Bake for 30 to 35 minutes or until toothpick inserted near center comes out clean. Cool completely.
- For frosting, in a medium bowl beat cream cheese and butter with an electric mixer until creamy. Beat in vanilla. Slowly beat in powdered sugar until smooth and creamy, beating well after each addition. Spread frosting on cooled cake.
