1½-2 lbs pork loin
1 lb Brussels sprouts, halved
2 Honeycrisp apples, sliced
⅓ cup honey mustard dressing
1/2 tbsp dried rosemary
½ tbsp garlic powder
⅓ cup dried cranberries
2 cups uncooked long grain and wild rice blend
3 tbsp olive oil
Pinch of salt
Pinch of pepper
Directions
- Preheat oven to 425°F.
- Toss Brussels sprouts and apples with olive oil, rosemary, garlic powder, salt, and pepper.
- Arrange Brussels sprouts and apples around the outer edges of a sheet pan, keeping them in separate sections if desired.
- Place pork in the center of the pan. Season lightly with salt, pepper, rosemary, and garlic powder, then brush with honey mustard dressing.
- Sprinkle cranberries over the vegetables.
- Roast for 30-35 minutes, or until pork reaches 145°F and Brussels sprouts are tender with browned edges.
- While the pork cooks, prepare wild rice according to package directions.
- Let pork rest for 5 minutes before slicing.
- Serve sliced pork and vegetables over wild rice.
