  1. Preheat oven to 425°F.
  2. Place a wire rack on a large rimmed baking pan; set aside.
  3. Using a mandoline, handheld slicer, or very sharp knife, cut carrots into â…›-inch-thick diagonal slices.
  4. Place slices in a large bowl, drizzle with oil; toss until evenly coated.
  5. Sprinkle with bagel mix; toss.
  6. Spread in a single layer on rack on prepared baking pan.
  7. Bake 40 minutes or just until beginning to lightly brown.
  8. Turn off oven and leave carrots in oven for 2 to 5 hours or until desired crispness.
  9. Transfer to a serving bowl. Store leftovers in a tightly covered container at room temperature up to 3 days.
