Ingredients
1/4 cup Melted Coconut Oil
1/2 cup Smooth, Natural Almond Butter
1/2 cup Coconut Sugar
2 Flax Eggs (2tbsp ground flax mixed with 6tbsp water)
1/2 cup Cacao Powder
1 tsp Vanilla Extract
1/4 tsp Peppermint Extract
1/4 tsp Baking Powder
1/4 tsp Salt
1/4 cup Almond Flour
1/3 cup Coconut Cream
2/3 cup Nondairy Chocolate Chips
1/8 tsp Peppermint Extract
Sprinkles (optional)
Directions
  1. Line an 8x8 pan with parchment paper and preheat oven to 350°F.
  2. In a bowl, mix together all of the brownie base ingredients until well combined.
  3. Press evenly into the prepared pan and bake for 16-18 minutes.
  4. Let cool in the fridge for at least 20 minutes.
  5. In a small saucepan, melt together all of the fudge frosting ingredients until smooth.
  6. Spread evenly over top of the cool brownie base. Add optional sprinkles.
  7. Return to fridge to set for at least an hour before slicing and enjoying!
