




1/4 cup Fresh Thyme orange-pineapple juice blend
1/4 cup Fresh Thyme honey
6 rice papers (located in the Asian section)
4 kiwi fruits, peeled and thinly sliced
6 Bibb lettuce leaves, cut into thin strips
2 Honeycrisp or Braeburn apples, cut thinly into strips
1 1/2 cups mango slices, cut thinly into strips
- For sauce, in a small saucepan, combine juice blend and honey. Bring to boil. Stir and remove from heat. Cool.
- For spring rolls, place one rice paper in a shallow dish filled with warm water for 1 minute or until soft.
- Gently remove paper from water and place on cutting board or clean work surface.
- Layer three to four kiwifruit slices in the center of softened rice paper, then top with Bibb lettuce, apple and mango.
- Fold bottom of rice paper over filling; fold in both sides and roll up tightly.
- Repeat with remaining rice papers and filling. Serve with sauce.
