Potato-Cauliflower Mash
This white veggie mash has a creamy texture and light garlic flavor with the addition of hummus.

Potato-Cauliflower Mash

Ingredients
2 lb. yellow potatoes, peeled and cut into 1-inch pieces
1 medium head cauliflower, cored and cut into small florets
⅓ cup roasted garlic hummus
1/2 tsp. Fresh Thyme fine sea salt
2 Tbsp. pesto
Freshly cracked black pepper, to taste
Pine nuts, for garnish
Directions
- In a large pot, combine potatoes and cauliflower. Cover with water and bring to a boil; reduce heat. Simmer covered for 20 to 25 minutes or until vegetables are tender; drain.
- Return vegetables to pot. Add hummus and salt. Using a potato masher, mash vegetables to desired consistency. Transfer to a serving bowl.
- Swirl pesto into mash. Top with pepper and pine nuts, if desired.
