1 cup canned pumpkin pureé
1 cup milk (plus extra if needed)
1 egg
2 tbsp butter (melted)
2 scoops Truvani Pumpkin Spice Protein Powder
½ cup all purpose flour
¼ cup coconut or date sugar
2 tsp baking powder
½ tsp salt
Directions
1 cup canned pumpkin pureé
1 cup milk (plus extra if needed)
1 egg
2 tbsp butter (melted)
2 scoops Truvani Pumpkin Spice Protein Powder
½ cup all purpose flour
¼ cup coconut or date sugar
2 tsp baking powder
½ tsp salt
- Preheat your waffle iron. In a large mixing bowl, beat your egg and stir in milk, melted butter, pumpkin pureé until smooth. Add the flour, pumpkin spice protein powder, baking powder, sugar and salt. Stir until just mixed. Some small lumps are fine.
- Spray waffle iron with nonstick cooking spray. Pour batter onto the hot waffle iron and use the back of a spoon to spread the batter over the surface of the iron. Cook until crisp and browned. Serve with the toppings of your choice.
Optional: Top with maple syrup, honey, whipped cream, or chopped pecans
