Ingredients
1 dozen Fresh Thyme large eggs
2 cloves garlic, minced
1/2 tsp. Fresh Thyme dried oregano leaves
Fresh Thyme garlic olive oil spray
1 (16 oz.) pkg. Fresh Thyme frozen shredded hash browns, thawed
1 cup Fresh Thyme small curd cottage cheese
1 cup Fresh Thyme fully cooked smoked sausage, diced
3/4 cup chopped red onion, divided
1 cup green bell pepper, seeded and chopped
1 cup Fresh Thyme shredded mild cheddar cheese
Black pepper, to taste
2 cups red and/or yellow grape tomatoes, halved
1/4 cup chopped fresh cilantro
1 Tbsp. fresh lime juice
Paprika, for garnish
Directions
- In a large bowl, whisk together eggs, garlic, and oregano; set aside.
- Spray 13x9x2-inch baking pan with garlic olive oil spray. Combine hash browns and cottage cheese. Spread in pan. Top with sausage, 1/2 cup red onion, and bell pepper.
- Pour egg mixture over mixture in baking pan. Sprinkle with cheese and season with black pepper. Cover and refrigerate overnight, if desired.
- Remove casserole from refrigerator and uncover. Preheat oven to 350ËšF. Bake for 35 to 40 minutes or until eggs are set.
- In a small bowl, combine tomatoes, remaining 1/4 cup red onion, cilantro, and lime juice. Serve casserole topped with tomato mixture. Garnish with paprika, if desired.
