Ingredients
1 dozen Fresh Thyme large eggs
2 cloves garlic, minced
1/2 tsp. Fresh Thyme dried oregano leaves
Fresh Thyme garlic olive oil spray
1 (16 oz.) pkg. Fresh Thyme frozen shredded hash browns, thawed
1 cup Fresh Thyme small curd cottage cheese
1 cup Fresh Thyme fully cooked smoked sausage, diced
3/4 cup chopped red onion, divided
1 cup green bell pepper, seeded and chopped
1 cup Fresh Thyme shredded mild cheddar cheese
Black pepper, to taste
2 cups red and/or yellow grape tomatoes, halved
1/4 cup chopped fresh cilantro
1 Tbsp. fresh lime juice
Paprika, for garnish
Directions
  1. In a large bowl, whisk together eggs, garlic, and oregano; set aside. 
  2. Spray 13x9x2-inch baking pan with garlic olive oil spray. Combine hash browns and cottage cheese. Spread in pan. Top with sausage, 1/2 cup red onion, and bell pepper. 
  3. Pour egg mixture over mixture in baking pan. Sprinkle with cheese and season with black pepper. Cover and refrigerate overnight, if desired.  
  4. Remove casserole from refrigerator and uncover. Preheat oven to 350ËšF. Bake for 35 to 40 minutes or until eggs are set.  
  5. In a small bowl, combine tomatoes, remaining 1/4 cup red onion, cilantro, and lime juice. Serve casserole topped with tomato mixture. Garnish with paprika, if desired.
