Ingredients
1 1/2 cups caramel coffee*, brewed and chilled
1/2 cup refrigerated coconut milk
2/3 cup chia seeds
3 Tbsp. Fresh Thyme light agave nectar
1/4 cup frozen coconut whip, thawed
Chocolate-covered espresso beans, chopped, optional
Directions
  1. In a large bowl, whisk together coffee, coconut milk, chia seeds, and light agave nectar. Pour into four 6-oz. serving cups. Cover and chill for 4 hours or overnight.
  2. Top pudding with coconut whip and chocolate-covered espresso beans, if desired.

* The stronger the brew, the bolder the flavor of the pudding.
