Carne Asada Street Tacos

Non-stick cooking spray
8 corn tortillas
1 Tbsp. Fresh Thyme extra virgin olive oil
2 ears fresh corn, husks and silk removed
1 poblano pepper, stemmed and seeded
1/4 medium red onion
Fresh Thyme fine sea salt
Ground black pepper
1/2 lb. Certified Angus Beef carne asada
1/3 cup salsa verde or salsa tomatillo
1/4 cup crumbled Cotija cheese
1/4 cup sour cream
1 large radish, thinly sliced
2 Tbsp. finely chopped cilantro, optional

Directions
- Prepare charcoal or gas grill for indirect cooking over medium-high heat. Coat grate with non-stick cooking spray. Wrap corn tortillas in foil and place on indirect side of grill to warm.
- Brush oil over corn, poblano, and onion; grill over direct heat 6 minutes or until vegetables are crisp-tender and slightly charred on all sides, turning occasionally.
- Transfer to a cutting board; let stand until cool enough to handle. Carefully cut kernels off cobs. Finely chop poblano and onion. Season grilled vegetables with salt and pepper.
- Grill carne asada over direct heat 6 minutes or until fully cooked, turning once. Transfer to a cutting board and let stand 5 minutes; thinly slice.
- To serve, layer warmed tortillas with carne asada, corn, poblano, onion, salsa verde, and cheese. Top with sour cream, radish, and, if desired, cilantro. Serve tacos with lime wedges on the side.
