Ingredients
Fresh Thyme Coffee Beans
Optional: Vanilla Bean
Optional: cinnamon sticks
Optional: cardamom pods

Directions
  1. Grind Fresh Thyme coffee beans to make 1½ cups medium-coarse grounds. Add to 8 cups water in a large pitcher. Stir to ensure grounds submerge.
  2. Steep mixture at room temperature 12–24 hours (the longer, the stronger). If desired, add vanilla bean, cinnamon sticks, cardamom pods, or fresh mint at this stage.
  3. To remove grounds (and any additions, if used), strain coffee concentrate into another large pitcher through a fine wire-mesh sieve with cheesecloth.
  4. To serve, dilute concentrate to taste (about 1:1 ratio) with water, sparkling water, or milk. Add sweeteners as desired. Store in refrigerator up to 2 weeks..
