




Fresh Thyme olive oil cooking spray
1 (2 lb.) flank steak
1 tsp. Fresh Thyme fine sea salt, divided
3/4 tsp. Fresh Thyme black pepper, divided
2 Tbsp. finely chopped fresh parsley
2 Tbsp. finely chopped fresh sage
2 Tbsp. finely chopped fresh chives
2 Tbsp. finely chopped fresh rosemary
2 Tbsp. minced garlic
1 tsp. crushed red pepper
1/3 cup Fresh Thyme extra virgin olive oil
- Let steak stand at room temperature for 30 minutes.
- Prepare a charcoal or gas grill, for direct medium heat. Coat grate with cooking spray.
- Season steak with ½ tsp. salt and ½ tsp. pepper.
- Grill, covered, to desired doneness, turning once. Allow 14 minutes for medium rare (160°F).
- Meanwhile, on a large cutting board, sprinkle surface evenly with fresh herbs, garlic, crushed red pepper, salt, and remaining black pepper.
- Drizzle oil over top of fresh herb mixture.
- Remove steak and place on oil mixture, turning several times to coat thoroughly.
- Cut steak against the grain into thin slices and serve immediately.
