Herbed Pork Chops with Apple Relish
Unique in its blend of flavors, this dish is sure to satisfy on a fall evening. Fresh veggies coupled with juicy pork chops feature a sweet and buttery finish of Honeycrisp apples and Yukon gold potatoes.

Herbed Pork Chops with Apple Relish

Ingredients
4 tsp. Fresh Thyme olive oil, divided
1/2 lb yukon gold potatoes, halved
1/2 lb carrots, peeled and chopped
1 sprig fresh thyme
1 tsp. fresh garlic, minced
1 tsp. Dijon mustard
4 (1-inch-thick) pork loin chops
Fresh Thyme fine sea salt
Fresh Thyme ground black pepper
Apple Relish:
1 Sweet Red apple, such as Honeycrisp
1/4 cup green onion
2 tbsp Fresh Thyme Olive Oil
2 tbps Red Wine Vinegar
1 tbsp finely chopped parsley
2 tsp Fresh Thyme honey
Directions
- Heat 2 tsp. oil in a large skillet over medium heat. Add potatoes, carrots and thyme; toss to coat. Cook, covered, for 20 minutes, stirring twice. Meanwhile, prepare Apple Relish.
- Add garlic to mixture in skillet and cook 1 minute. Stir in mustard until combined. Season with salt and pepper. Transfer potato mixture to a platter and cover with foil to keep warm. Discard thyme sprig.
- In the same skillet, heat remaining olive oil over medium-high heat. Add pork and cook to desired doneness, turning once. Allow 6 to 7 minutes total for medium (145°F).* Remove pork from skillet.
- Serve pork chops with potato mixture and top with Apple Relish.
- Apple Relish: Core and chop 1 sweet red apple, such as Honeycrisp. In a medium bowl, combine apple, 1/4 cup finely chopped shallot or green onion, 2 Tbsp. Fresh Thyme extra virgin olive oil, 2 Tbsp. red wine vinegar, 1 Tbsp. finely chopped parsley and 2 tsp. Fresh Thyme honey. Season to taste.
*Note: USDA recommends pork be cooked to an internal temperature of at least 145°F.
