Nutty Honeycomb Brittle
This brittle is made with a combination of cashews and a honey-based caramel that hardens into a crispy, honeycomb-like texture.

Ingredients
Nonstick cooking spray, for greasing
2 cups salted cashews
1½ cups sugar
¼ cup Fresh Thyme honey
¼ cup of water
1 Tbsp. Fresh Thyme baking soda
Directions
- Spray a large rimmed baking sheet lightly with cooking spray. Scatter cashews on the baking sheet.
- In a large saucepan, bring the sugar, honey and the water to boiling over medium-high heat, stirring occasionally. Reduce heat to medium. Clip a candy thermometer to the side of pan and cook mixture without stirring until thermometer reaches 300℉.
- Remove pan from heat and whisk in baking soda (mixture will foam and triple in volume). Pour over the cashews on prepared baking sheet without spreading; cool 1 hour. Break brittle into pieces before serving.
