Sheet Pan Lemon Garlic Salmon with Asparagus & Potatoes

1½ lbs salmon fillets
1 lb red and yellow baby potatoes, quartered
1 bunch asparagus, trimmed
½ cup lemon garlic marinade
1 lemon, sliced
¼ cup grated Parmesan cheese
2 tbsp fresh parsley, chopped
3 tbsp olive oil, divided
Salt, to taste
Pepper, to taste
Directions
- Preheat oven to 425°F.
- Toss potatoes with 2 tbsp olive oil, salt, and pepper.
- Spread potatoes on the outer edges of a sheet pan and roast for 10 minutes.
- Remove pan from oven. Toss asparagus with remaining 1 tbsp olive oil and arrange on one side of the pan.
- Place salmon fillets in the center of the pan and brush generously with lemon garlic marinade. Top with lemon slices.
- Roast for 12-15 minutes, or until salmon reaches 145°F and potatoes are fork tender.
- Sprinkle Parmesan cheese over the vegetables and garnish with parsley before serving.
