Spring Garden Nachos

Ingredients
2 cups broccoli florets
1 cup cauliflower florets
1/2 package Fresh Thyme yellow corn tortilla chips
2 cups loosely packed fresh baby spinach leaves
2 bell peppers - seeded and chopped
1/2 cup Fresh Thyme canned black beans - drained and rinsed
1 (16-oz.) container Fresh Thyme mild salsa
1 avocado - pitted, peeled and diced
2 cups Fresh Thyme shredded 4-cheese Mexican blend
1/2 cup light sour cream
Fresh cilantro, chopped
Directions
- Preheat oven to 425°F.
- Place broccoli and cauliflower in a microwave-safe bowl and cover with plastic wrap.
- Microwave on high (100% power) for 4 minutes or until vegetables are tender.
- Spread 3 cups chips in a single layer on an overproof platter.
- Evenly layer with 1 cup broccoli, 1/2 cup cauliflower, 1 cup spinach, 1 chopped baby bell pepper, 1/4 cup beans, 1/4 cup salsa, half of the avocado, and 1 cup cheese.
- Repeat layers.
- Bake for 10 minutes or until the cheese melts and browns on top.
- Serve with remaining salsa and the sour cream.
- Sprinkle with cilantro.
