Ingredients
Fresh Thyme cooking spray
10 oz. orange dark chocolate bar, finely chopped
6 Fresh Thyme large eggs, lightly beaten
¾ cup light olive oil
½ cup Fresh Thyme organic honey
1 tsp. Fresh Thyme organic vanilla extract
½ cup cocoa powder
2 Tbsp. fresh orange zest
¼ tsp. Fresh Thyme fine sea salt
Fresh Thyme organic powdered cane sugar, for garnish
1 blood orange, peeled and sliced
1 navel orange, peeled and sliced
Fresh mint, for garnish
Directions
  1. Preheat oven to 350°F. Line an 8-inch round cake pan with parchment paper and spray with cooking spray.
  2. In a microwave-safe bowl, place chopped dark chocolate. Microwave on HIGH in 30-second intervals until melted; stir as needed. Cool slightly.
  3. Add eggs, olive oil, honey, and vanilla to melted chocolate; whisk until combined. Add cocoa powder, orange zest, and salt; whisk just until combined.
  4. Pour batter into prepared pan. Bake 30 to 35 minutes or until a toothpick inserted near center comes out clean. Cool in pan on wire rack. Remove from pan and place on serving plate. Sprinkle with powdered sugar and top with orange slices. Garnish with fresh mint, if desired.
