Avocado Shrimp Pasta

Avocado Shrimp Pasta

Ingredients
1 (16-oz.) package regular or whole wheat spaghetti
2 ripe large avocados (or 3 ripe medium avocados), pitted and peeled
1/3 cup Fresh Thyme almond milk, plus more as needed
3 cloves garlic, chopped
1 Tbsp. fresh lemon juice (about 1/2 lemon)
1/2 tsp. Fresh Thyme fine sea salt, plus more for seasoning
1 Tbsp. Fresh Thyme extra virgin olive oil
1 lb. medium raw shrimp, thawed if frozen, peeled, deveined and rinsed
Ground black pepper, to taste
3 cups fresh baby spinach
1 cup cherry tomatoes, halved
1 cup finely shredded Parmesan cheese
Directions
- Cook pasta according to package directions.
- Meanwhile for sauce, combine avocados, almond milk, garlic, lemon juice and the 1/2 tsp. salt in a food processor. Process until mixture is smooth and saucelike. Add more almond milk and salt as desired; set aside.
- Heat oil in a large straight-sided nonstick skillet over medium-high heat. Season shrimp with salt and pepper. Cook shrimp in hot oil 3 minutes or until lightly browned, turning once. Remove skillet from heat and add cooked pasta, sauce and spinach. Toss until pasta is well coated with sauce. Top with tomatoes and cheese; serve immediately.
