Ingredients
1 (5-oz.) Fresh Thyme organic whole wheat pizza crust
1 Tbsp. Fresh Thyme extra virgin olive oil, plus more for topping
1 (5-6 oz.) chicken breast half, cut into thin strips
1 tsp. red pepper flakes, plus more for topping
2 cups broccoli florets, chopped
3/4 cup finely chopped red bell pepper
Fresh Thyme fine sea salt, to taste
Fresh Thyme ground black pepper, to taste
1½ cups Fresh Thyme shredded mozzarella cheese
½ cup shaved Parmesan cheese, plus more for garnish
Directions
- Preheat oven to 400°F. Line a large baking sheet with foil.
- Place crust on prepared baking sheet. Bake crust for 5 minutes.
- Meanwhile, heat oil in skillet over medium heat. Add chicken and red pepper flakes and cook 10 minutes. Add broccoli and bell pepper and cook 5 minutes, stirring occasionally. Season to taste with salt and pepper.
- Sprinkle mozzarella and Parmesan cheeses on pizza crust. Top with chicken mixture. Bake 15 minutes or until cheese starts to brown.
- Sprinkle pizza with additional red pepper flakes and Parmesan; drizzle with olive oil. To serve, cut pizza into eight slices.
