Ingredients
1 cedar grilling plank
Non-stick olive oil cooking spray
12 hothouse tomatoes
2 (12-inch) metal or wooden skewers*
3 sprigs fresh rosemary plus more for garnish
1 Tbsp. Fresh Thyme olive oil
1 Tbsp. Fresh Thyme balsamic vinegar
1/8 tsp. Fresh Thyme sea salt
1/8 tsp. cracked black pepper
Directions
  • Soak grilling plank in water per package directions. Prepare a charcoal or gas grill for direct high heat on one side and direct low heat on the other. Coat grate with cooking spray.
  • Place six tomatoes onto one skewer. Repeat with remaining tomatoes and skewer. Place skewers on grilling plank and lightly coat with cooking spray.
  • Place rosemary sprigs on grill over high heat and let burn and smoke. Meanwhile, place grilling plank with tomatoes over low heat and grill, covered, for 10 minutes or until skins begin to split. Remove from grill and let stand until skewers are cool enough to handle.
  • To serve, remove tomatoes from skewers and sprinkle with oil and vinegar and season with salt and pepper. Garnish with fresh rosemary.

*Note: Always follow plank prep directions.
**Note: If needed, use two skewers to keep tomatoes from rolling. If using wooden skewers, soak for at least 1 hour before using.
