1 Tbsp. refrigerated vanilla almond milk
1 Fresh Thyme large egg yolk
1/4 cup Fresh Thyme all-purpose flour
2 Tbsp. Fresh Thyme plain granola, divided
2 Tbsp. Fresh Thyme organic brown sugar
1/4 tsp. baking powder
1/8 tsp. Fresh Thyme fine sea salt
3 Tbsp. pitted, chopped dark sweet cherries
1 Tbsp. semisweet chocolate chips
1 whole dark sweet cherry, for garnish
Directions
- In an 8-oz. microwave-safe coffee mug, heat butter in microwave for 20 to 30 seconds or until melted. Cool slightly. Stir in vanilla almond milk and egg yolk.
- Add flour, 1 Tbsp. granola, brown sugar, baking powder, and salt. Stir in chopped cherries and chocolate chips. Top with remaining 1 Tbsp. granola.
- Microwave on high for 1 minute, 20 seconds or until set. Top with whole cherry.
