1 cup Fresh Thyme peanut butter
¾ cup Fresh Thyme honey or maple syrup
½ cup coconut oil
2 cups old-fashioned rolled oats
6 Tbsp. unsweetened cocoa powder
¼ cup sweetened flaked coconut
2 tsp. Vanilla extract
½ tsp. Fresh Thyme fine sea salt
Directions
  1. Line a large baking sheet with parchment paper. In a saucepan, melt peanut butter, honey and coconut oil over medium heat, stirring constantly. Remove from heat and stir in rolled oats, cocoa powder, shredded coconut, vanilla and salt.
  2. Drop scoops or spoonfuls of cookie mixture onto prepared baking sheet. Chill 1 hour or until set.
