Ingredients
1 (13.5-oz.) can Fresh Thyme organic coconut milk
1 cup Fresh Thyme orange-pineapple juice blend
1/3 cup coconut sugar
3 ripe pears, quartered, cores removed
1 1/3 cups cranberry sauce
Frozen coconut whip, thawed, optional
Fresh Thyme ground cinnamon, optional
Directions
  1. In a large saucepan, bring coconut milk, juice and coconut sugar to boiling over high heat. Reduce heat to maintain a simmer.
  2. Cook the pears in the liquid, covered, 20 minutes. Remove pan from heat and let stand until liquid and pears are room temperature. Drain pears, reserving liquid for another use, such as smoothies.
  3. Serve poached pears with cranberry sauce. If desired, top with coconut whip and cinnamon.
