Ingredients
Fresh Thyme Coffee Beans
Optional: Vanilla Bean
Optional: cinnamon sticks
Optional: cardamom pods

Directions
- Grind Fresh Thyme coffee beans to make 1½ cups medium-coarse grounds. Add to 8 cups water in a large pitcher. Stir to ensure grounds submerge.
- Steep mixture at room temperature 12–24 hours (the longer, the stronger). If desired, add vanilla bean, cinnamon sticks, cardamom pods, or fresh mint at this stage.
- To remove grounds (and any additions, if used), strain coffee concentrate into another large pitcher through a fine wire-mesh sieve with cheesecloth.
- To serve, dilute concentrate to taste (about 1:1 ratio) with water, sparkling water, or milk. Add sweeteners as desired. Store in refrigerator up to 2 weeks..
