1 Tbsp. Fresh Thyme extra-virgin olive oil
1 (16 oz.) pkg. Honest Turkey antibiotic free 99% fat free ground turkey
1 (16 oz.) pkg. The Little Potato Co. A Little Savory Herb fresh potatoes with seasoning packet, potatoes sliced in half
1 large sweet potato, peeled and diced (about 3 cups)
3 ribs celery, chopped
½ small red onion, finely chopped
2 cloves garlic, minced
1 tsp. Fresh Thyme crushed organic red chili peppers, plus more for garnish
6 cups organic unsalted chicken bone broth
½ (8 oz.) container Good Culture organic sour cream
5 cups loosely packed Fresh Thyme organic baby spinach & baby kale mix
Fresh Thyme fine sea salt, to taste

1 large sweet potato, peeled and diced (about 3 cups) 

3 ribs celery, chopped  

½ small red onion, finely chopped 

2 cloves garlic, minced 

1 tsp. Fresh Thyme crushed organic red chili peppers, plus more for garnish 

6 cups organic unsalted chicken bone broth  

½ (8 oz.) container Good Culture organic sour cream  

5 cups loosely packed Fresh Thyme organic baby spinach & baby kale mix  

Fresh Thyme fine sea salt, to taste 

  1. In a large saucepan or Dutch oven, heat olive oil over medium heat; add ground turkey and potato seasoning packet. Cook for 6 to 8 minutes or until 165°F, stirring occasionally to break into crumbles.  
  2. Add potatoes, sweet potato, celery, red onion, garlic, and 1 tsp. crushed red chili peppers to turkey in saucepan. Stir in bone broth. Bring to boil; reduce heat. Cover and simmer for 15 to 20 minutes or until potatoes are fork-tender.  
  3. Remove from heat, stir in sour cream and baby spinach & kale mix.  
  4. Ladle soup into serving bowls. Garnish with additional crushed red chili peppers, if desired. Season to taste with sea salt.
