Ingredients
2 cups assorted fresh berries
1/3 cup Elderberry Simple Syrup, opposite
2 cups gluten-free all-purpose flour
1 Tbsp. Fresh Thyme baking powder
½ tsp. xanthan gum
½ tsp. Fresh Thyme fine sea salt
2 Fresh Thyme large eggs, lightly beaten
1½ cups Fresh Thyme 2% reduced-fat milk
¼ cup Fresh Thyme organic ghee, melted
3 Tbsp. agave nectar
2 tsp. Fresh Thyme organic vanilla extract
½ cup chopped walnuts, toasted
Fresh Thyme nonstick spray
Directions

 

  1. In a large bowl, stir together flour, baking powder, xanthan gum, and salt. In a medium bowl, whisk together eggs, milk, ghee, agave nectar, and vanilla. Add egg mixture to flour mixture; stir until combined. Stir in walnuts. Let stand 5 minutes. Stir batter again.
  2. Spray a griddle or heavy skillet with nonstick spray; preheat over medium heat. Pour ¼-cup portions of batter onto hot griddle. Cook for 1 to 2 minutes on each side or until pancakes are golden. (Flip to second side when surfaces are bubbly and edges are slightly dry.)
  3. To serve, stack 3 pancakes on each plate. Top with fresh berries.
