4 (12-in.x18-in.) pieces heavy-duty aluminum foil
Fresh Thyme garlic olive oil spray
2 medium sweet potatoes - peeled and thinly sliced
1/2 lb. asparagus spears - ends trimmed
1 Tbsp. Lemon-Garlic Spice Blend (see recipe below)
2 Tbsp. salt-free garlic and herb seasoning blend
1 Tbsp. lemon zest
1/4 tsp. ground black pepper
Directions
- Spray 4 (12-in.x18-in.) pieces heavy-duty aluminum foil with cooking spray.
- For each packet add 1/2 sweet potato, sliced, and 6 asparagus spears, trimmed. Sprinkle with 1 Tbsp. Lemon-Garlic Spice Blend.
- Seal foil around vegetables.
- Grill for 15 minutes over medium direct heat or until sweet potatoes are tender.
Lemon-Garlic Spice Blend:
- In a small bowl, combine 2 Tbsp. salt-free garlic and herb seasoning blend, 1 Tbsp. lemon zest, and 1/4 tsp. ground black pepper.
