2 mangos, halved, seeded, peeled and chopped
1 medium red sweet pepper, stemmed, seeded and chopped
1 jalapeno, seeded and finely chopped
1/2 cup finely chopped red onion
2. tbsp. snipped fresh cilantro
1/2 tsp. finely shredded lime peel
1 tbsp. fresh lime juice
1 tbsp. Fresh Thyme extra virgin olive oil
1/2 tsp. Fresh Thyme ground cumin
1/4 tsp. Fresh Thyme sea salt
1 avocado, peeled, seeded and diced
Directions
In a medium bowl, combine mangoes, sweet pepper, jalapeno, red onion, cilantro, lime peel, lime juice, olive oil, cumin and salt. Gently stir in the avocado. Cover and chill for 2 hours before serving.
