Ingredients
1 cup Silk Unsweetened Almond milk
2 (5.3 oz.) cups Silk Vanilla Almond milk Yogurt Alternative, divided
1 cup canned pumpkin puree
3 Tbsp. Fresh Thyme organic maple syrup
2 tsp. pumpkin pie spice
1/2 tsp. Fresh Thyme fine sea salt
1 cup steel-cut oats
4 pint-size canning jars
Optional topping: coarsely crushed graham crackers
Optional topping: sliced almonds, toasted
Directions
  1. In a large bowl, whisk together almond milk, 1 (5.3 oz.) cup yogurt alternative, pumpkin, maple syrup, pumpkin pie spice, and salt. Stir in oats until combined. Spoon mixture into jars.
  2. Top with remaining yogurt alternative. Cover and refrigerate overnight.
  3. Add optional toppings before serving.
