1 cup Silk Unsweetened Almond milk
2 (5.3 oz.) cups Silk Vanilla Almond milk Yogurt Alternative, divided
1 cup canned pumpkin puree
3 Tbsp. Fresh Thyme organic maple syrup
2 tsp. pumpkin pie spice
1/2 tsp. Fresh Thyme fine sea salt
1 cup steel-cut oats
4 pint-size canning jars
Optional topping: coarsely crushed graham crackers
Optional topping: sliced almonds, toasted
Directions
- In a large bowl, whisk together almond milk, 1 (5.3 oz.) cup yogurt alternative, pumpkin, maple syrup, pumpkin pie spice, and salt. Stir in oats until combined. Spoon mixture into jars.
- Top with remaining yogurt alternative. Cover and refrigerate overnight.
- Add optional toppings before serving.
