Ingredients
Non-stick cooking spray
1 (16 oz.) pkg. shredded hash browns, thawed
1 1/2 cups shredded Fresh Thyme four-cheese Mexican cheese blend (6 oz.), divided
8 Fresh Thyme large eggs, divided
1/2 tsp. Fresh Thyme organic ground cumin
1/4 tsp. Fresh Thyme fine sea salt
1/4 tsp. Fresh Thyme ground black pepper
6 slices precooked bacon
2 Tbsp. chopped fresh parsley
6 Tbsp. Fresh Thyme thick and chunky salsa
Directions
  1. Preheat oven to 425°F.
  2. Coat an 18x13x1-inch baking pan with cooking spray. Set aside.
  3. In a large bowl, combine hash browns, 1 cup cheese, 2 eggs, cumin, salt, and pepper. Divide mixture into 6 mounds, about 2/3 cup each, in prepared pan. Shape hash brown mixture into round nests about 4 1/2 inches in diameter.
  4. Bake for 15 to 17 minutes or until edges of hash browns are brown. Remove pan from oven.
  5. Reduce oven temperature to 350°F. Crack one egg into the center of each nest. Sprinkle nests with remaining 1/2 cup of cheese. Place bacon slices around nests. Return to oven and bake 13 to 15 minutes more or until eggs are set and bacon is crisp.
  6. Sprinkle each nest with parsley and top with 1 Tbsp. salsa.
