

Watermelon Strawberry Shaved Ice
No snow cone machine required! Pour fruit mixture in a shallow pan and slide it in the freezer. Scrape the surface with a fork every 30 minutes as ice crystals form.

Watermelon Strawberry Shaved Ice

Ingredients
1/2 cup water
1/4 cup Fresh Thyme light agave nectar
3 sprigs fresh mint plus more for garnish
3 cups cubed watermelon
1 cup fresh strawberries, tops removed
1 Tbsp. white balsamic vinegar
Directions
- In a small saucepan, combine water, agave nectar, and mint. Bring mixture to a boil. Reduce heat and simmer for 5 minutes. Remove from heat and cool slightly. Discard mint sprigs. ","In a blender, combine water mixture, watermelon, strawberries, and vinegar. Cover and blend until smooth.
- Pour into a 13x9x2-inch baking pan. Freeze for 30 minutes. Scrape across the surface with a fork to break apart ice crystals. Return to freezer. Repeat freezing and scraping every 30 minutes until all of the mixture is frozen.
- Serve garnished with fresh mint.
- Kiwi Shaved Ice: Bring 1 cup water, 1/4 cup Fresh Thyme light agave nectar, and 3 sprigs fresh thyme to a boil. Reduce and simmer 5 minutes. Cool slightly. Discard thyme sprigs. In a blender, combine 8 peeled kiwi, 1/2 cup fresh spinach leaves, and 1 Tbsp. fresh lime juice. Cover and blend until smooth. Continue with Step 3 above
