Balsamic Herb-Roasted Carrots

Balsamic Herb-Roasted Carrots

Ingredients
2 lb. medium carrots
2 Tbsp. Fresh Thyme extra virgin olive oil
2 Tbsp. white balsamic vinegar
1 tsp. garlic-and-herb seasoning blend
1/2 tsp. Fresh Thyme fine sea salt
1/4 tsp. ground black pepper
1 Tbsp. chopped fresh flat-leaf parsley
1 Tbsp. chopped fresh basil
Directions
- Preheat oven to 400ºF. If there are any carrots larger than 1 inch in diameter, cut them in half lengthwise. In a large bowl, combine oil, vinegar, garlic-and-herb seasoning blend, salt, pepper, and carrots.
- Place carrots on rimmed baking pan. Bake for 20 to 25 minutes or until carrots are fork-tender. In a small bowl, combine parsley and basil. Sprinkle mixture over roasted carrots.
