1 (14-oz.) pkg. frozen puff pastry, thawed
Fresh Thyme unbleached all-purposed flour, for dusting
½ cup Good Foods caramelized onion Gruyère cheese dairy spread and dip, plus more for serving
½ cup plus 2 Tbsp. Gruyère cheese block, shredded, divided
2 cups tightly packed baby spinach, stems removed
1 Fresh Thyme large egg yolk
1 Tbsp. water
Directions

1 (14-oz.) pkg. frozen puff pastry, thawed

Fresh Thyme unbleached all-purposed flour, for dusting

½ cup Good Foods caramelized onion Gruyère cheese dairy spread and dip, plus more for serving

½ cup plus 2 Tbsp. Gruyère cheese block, shredded, divided

2 cups tightly packed baby spinach, stems removed

1 Fresh Thyme large egg yolk

1 Tbsp. water

Fresh Thyme organic thyme, for garnish

  1. Preheat oven to 375°F. Line a large baking sheet with parchment paper; set aside.
  2. Unfold puff pastry on a lightly floured surface. Roll pastry into a 14x10-inch rectangle.
  3. Spread dip evenly to edges of pastry. Sprinkle with ½ cup shredded cheese. Arrange baby spinach on top to cover cheese. Tightly roll dough into a log, starting from the long side. Lightly pinch dough together along long side to seal. Freeze log on prepared baking sheet for 15 to 20 minutes.
  4. Transfer log to a lightly floured cutting board; trim ¼-in. off each end. Cut into 9 (1½ -in.-wide slices). Place slices, cut sides down, about 1 inch apart on prepared baking sheet. In a prep dish, use a fork to mix together egg yolk and water; brush on tops of pinwheels. Sprinkle pinwheels with remaining 2 Tbsp. Gruyère cheese.
  5. Bake for 30 to 32 minutes or until center of pastries are golden brown and cooked through. Preheat broiler on HIGH. Broil for 2 to 3 minutes or until cheese is golden brown and bubbly. Garnish with thyme, if desired.
