Ingredients
1 cup pearl barley
3 cups water
1/2 tsp. Fresh Thyme fine sea salt
4 cups baby kale mix
10 oz. cooked chicken breast, thinly sliced
1 cup raspberries
1 cup blueberries
1/2 cup Fresh Thyme goat cheese crumbles
1/4 cup Fresh Thyme raspberry dressing
Directions
- In a saucepan, combine barley, the water and salt. Bring to boiling over high heat. Reduce heat to maintain a simmer. Cook 20 minutes or until the barley is soft yet chewy and tripled in volume. Check frequently until desired chewiness is reached. Add more water, 1 cup at a time, as needed to prevent pan from becoming dry. Fluff barley with a fork.
- To serve, divide warm barley, baby kale mix, chicken, berries and goat cheese among bowls. Top with dressing.
