Ingredients
1 cup Fresh Thyme peanut butter
¾ cup Fresh Thyme honey or maple syrup
½ cup coconut oil
2 cups old-fashioned rolled oats
6 Tbsp. unsweetened cocoa powder
¼ cup sweetened flaked coconut
2 tsp. Vanilla extract
½ tsp. Fresh Thyme fine sea salt
Directions
- Line a large baking sheet with parchment paper. In a saucepan, melt peanut butter, honey and coconut oil over medium heat, stirring constantly. Remove from heat and stir in rolled oats, cocoa powder, shredded coconut, vanilla and salt.
- Drop scoops or spoonfuls of cookie mixture onto prepared baking sheet. Chill 1 hour or until set.
