Ingredients
Non-stick olive oil cooking spray
2 ears fresh sweet corn, husked and silk removed
1 cup cherry tomatoes, halved
1 cup diced English cucumber
1/2 to 1 serrano chile, seeded and finely chopped
1/2 cup finely chopped red onion
1/2 cup snipped fresh cilantro
3 Tbsp. fresh lime juice
1/4 tsp. Fresh Thyme fine sea salt
Directions
- Prepare a charcoal or gas grill for direct medium heat. Coat grate with cooking spray. Coat corn with cooking spray.
- Grill corn 10 minutes or until fully cooked and starting to char, turning occasionally. Transfer to a cutting board and let stand until cool enough to handle. Cut the corn kernels from the cobs.
- In a medium bowl, combine the corn kernels, tomatoes, cucumber, serrano, onion, cilantro, lime juice, and salt. Stir to combine.
