Ingredients
¼ cup dark agave nectar
2 Tbsp. cashew butter
1 Fresh Thyme large egg white, lightly beaten
2 cups old-fashioned rolled oats
¼ cup slivered almonds
¼ cup pecan pieces, chopped
2 tsp. Fresh Thyme organic shredded coconut
¼ tsp. ground allspice
Fresh Thyme coconut oil cooking spray
2 cups chopped fruit, such as apples and pears
1 orange, juiced and zested
2 cups Greek yogurt
Pomegranate arils, for garnish
Fresh Thyme ground cinnamon, for garnish
Directions
- Preheat oven to 325°F. For granola cups, in a medium microwave-safe bowl, stir together agave nectar and cashew butter. Microwave on HIGH for 25 seconds. Stir to combine and cool slightly. Stir in beaten egg white until well combined. Mix in oats, almonds, pecans, coconut, and allspice.
- Spray eight 2½-inch muffin cups with cooking spray. Divide oat mixture evenly among muffin cups, pressing onto bottoms and sides of cups. Bake 15 minutes. Cool completely in muffin pan on a wire rack.
- In a medium bowl, combine mixed fruits and orange juice and zest. Remove granola cups from muffin cups, using a paring knife if needed. Spoon Two Good Greek Yogurt into granola cups. Top with fruit mixture. Garnish with pomegranate arils and a dusting of cinnamon, if desired.
