2 cups cooked quinoa
1 can (15oz) chickpeas, rinsed and drained
1 cup cucumbers, diced
1/3 cup red onion, diced small
1/2 cup mint, chopped
1/2 cup parsley, chopped
1/2 cup roasted and salted pistachios, chopped
1/2 cup crumbled feta cheese
Sea salt, to taste
Pepper, to taste
2 lemons, juiced
1/4 cup avocado oil
1/4 cup Savannah Bee Company Hot Honey
Directions
- Cook quinoa according to package directions
- Combine cooked quinoa, chickpeas, cucumber, red onion, mint, parsley, pistachios, and feta cheese.
- Prepare the dressing; In a small bowl, whisk lemon juice, avocado oil, and honey.
- Toss dressing throughout the salad and garnish with any extra mint or parsley.
- Serve chilled alone or with a grilled protein of your choice.
- Pro Tip! This salad is best prepared a few hours ahead of eating to allow all the flavors to combine. Prep it at the beginning of the week and enjoy delicious lunch or dinner just when you need it.
