Ingredients
¾ cup plain yogurt
2 Tbsp. fresh lime juice
2 Tbsp. Fresh Thyme olive oil
1 Tbsp. grated fresh ginger
2 tsp. minced garlic
2 tsp. garam masala
2 tsp. Fresh Thyme fine sea salt
1 tsp. ground turmeric
½ tsp. cayenne pepper, optional
8 meaty chicken pieces (thighs and/or drumsticks)
Non-stick cooking spray
2 cups Basmati Rice
2 Tbsp. Fresh Cilantro, finely chopped
1 cup Fresh mango, chopped
Directions
  1. For the marinade, in a large bowl, whisk together the yogurt, lime juice, olive oil, ginger, garlic, garam masala, salt, and turmeric until well combined. Whisk in cayenne, if desired. Add chicken and toss to coat. Cover bowl with plastic wrap and refrigerate at least 2 hours and up to 6 hours.  
  2. In the meantime, prepare Basmati Rice and Mango. Prepare 2 cups basmati rice according to package directions. Stir in 2 Tbsp. finely chopped cilantro. To serve, divide rice and 1 cup chopped fresh mango among servings. 
  3. Prepare charcoal or gas grill for indirect cooking over medium-high heat. Coat grate with cooking spray. 
  4. Remove chicken from bowl and shake off excess marinade. Grill 1 hour or until chicken is lightly charred and fork tender (175°F).
